Cream of Asparagus Soup

Ingredients

  • 1 '/2 cups chicken broth
  • 1/2 cup chopped onion
  • 2 cups cut asparagus
  • 1 tsp lemon juice
  • 2 tbsp butter or margarine
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • few dashes white pepper
  • 1 cup milk

Directions

In a saucepan combine broth, onion, asparagus and lemon juice. Bring to a boil, then simmer 8 minutes until Asparagus is tender. Place halt' the mixture in a blender or food processor. Cover and blend 30 to 60
seconds or until smooth. Pour into a bowl. Repeat with remaining mixture and set all aside.

In the same saucepan, melt the butter. Stir in flour, salt and pepper.
Add milk all at once. Cook and stir until mixture is thickened and bubbly. Stir in blended asparagus mixture. Cook and stir until soup is heated through.
Season to taste with additional salt and pepper.
Makes 3 to 4 servings.
