Squash With Spinach, Feta and Black BeansIngredients1 - 398ml can Black Beans (rinsed) 1 tbsp - chopped fresh basil 1/2 tsp - dried oregano 2 tbsp - olive oil, divided 1 tbsp - white whie vinegar 1 tbsp - butter 1/2 cup - chopped onion 2 - cloves garlic chopped 1 - 3lb squash (your favorite type) baked, seeded and mashed 1 - bunch spinach, washed trimmed and cut in 1/4in strips 1/2 cup - crumbled fetta cheese salt and pepper grated parmasean cheese
DirectionsIn a small bowl combine beans, basil, oregano, 1 tbsp oil and vinegar, set aside. In a large frying pan heat butter and 1 tbsp oil. Add onion and garlic; saute for 1 minute. Add spinach and saute for 2-3 minutes or until spinach is just wilted. Add feta cheese and bean mixture; heat through. Add salt and pepper to taste. Add spinach mixture to squash and toss. Transfer to a serving platter and sprinkle with parmasean cheese. Makes 4 servings. |
