Strawberry Pie or Tarts

Ingredients

• 1 quart Strawberries
• 1 cup sugar
• 4 tbsp lemon juice
• 2 tbsp cornstarch
• 1 tbsp gelatin dissolved  in 2 tbsp cold water
  

Directions

Mash half of the strawberries.  Add sugar and bring to a boil.  Dissolve cornstarch in lemon juice and add to mashed strawberries.  Cook until clear.  Add gelatin and cool.  Add remaining strawberries.  Pour into cooked pie or tart shells.

May be garnished with whipped cream.
