Squash - Apple Soup

Ingredients

  • 2 tbsp oil
  • 2 onions or leeks, chopped
  • 2 cloves garlic, chopped
  • 2 carrots, chopped
  • 4 cups butternut squash, cut up
  • 2 apples, chopped
  • 1 potato, peeled and chopped
  • 5 cups chicken stock
  • 1/2 tsp thyme

Directions

Saute onions or leeks and garlic in oil until soft.  Add remaining ingredients and cook 30 minutes until vegetables are tender.

Puree

Add 1/2 cup cream (optional)
