Strawberry CordialIngredients
DirectionsOld fashioned fruit cordials are becoming popular again. They make wonderfully refreshing light summer drinks served with ice cold sparkling water. In large microwaveable bowl, crush 5 cups (1.25L) sliced Ontario Strawberries. Microwave at Medium (50%) power for 5 minutes or until juicy. Strain through fine mesh nylon sieve into microwaveable deep bowl, covering with plate and weighing down with heavy can. Stir 2 tbsp (25 mL) lemon juice and 1 cup (250mL) granulated sugar into strawberry juice. Microwave at High for 5 minutes or until bubbly. Strain through dampened muslin lined sieve into clean bowl. Pour into sterilized bottle and seal. Store in refrigerator for up to 3 weeks or freeze for longer storage. Makes about 1 1/2 cups (375mL). To Serve: Pour 2 tbsp to 1/4 cup (25 to 50mL) in glass. Fill with sparkling water. Add ice cubes and garnish with a plump fresh strawberry if desired. |
